I really do love Mexican food, and especially that specific strain known as Tex-Mex. I grew up (mostly) in New Mexico and that is a completely different cuisine, relying heavily on Hatch chile peppers which I love as well. But I believe, as does my husband, that Tex-Mex can become an addiction with its spicy red salsa and crispy, salty tortilla chips at each meal; sour margaritas that sneak up on you and sizzling fajitas served alongside guacamole and fresh tortillas. We can eat it every week and only manage not to when exercising great self control!
I also think it’s one of the cuisines that is just better when eaten out. Those Tex-Mex kitchens churn out refritos, tortilla soup, enchiladas with consistency, always hot and delicious. However, there are a few things that we have mastered at home that can rival the Tex-Mex restaurant – Chicken Tortilla Soup, brisket or pulled pork tacos, fresh salsa and the classic margarita. One year my husband and I were on a sales club trip at the Ritz Carlton Cancun and we had the opportunity to take a cooking class. It was in that class that I was first introduced to Reposado Tequila and my life was transformed.
